The Epitome of Vegan

Mikey & I made this for lunch today, except for the bacon (It's such a shame to leave out bacon, the best part of any recipe no matter the recipe, but I am trying to be a vegan over here)....

We decided the recipe should really be called "The Epitome of Vegan," I mean come on, just look at it!
Anyway, here it goes!

Warm White Bean Salad with Spinach & Quinoa
1 clove garlic
1 bulb fennel (or any other onion)
1/2 cup(ish) mushrooms
1 Tbsp (+more for drizzling) olive oil
6 oz.(ish) spinach
1 can white beans (navy beans)
1 cup cooked quinoa
1 heat a skillet on medium heat

2 add about 1 Tbsp olive oil

3 chop up 1 clove of garlic (or more) and add it to the skillet

4 chop up some fennel (or any other onion) and add it as well

5 toss the garlic and onion until the garlic browns a bit and the onion gets nice and green

6 wash/prep/slice your mushrooms and add those in too

7 toss them all around to get everything pretty evenly browned, add some more olive oil if it needs it (5 min or until soft)

8 now add in about 6 oz. of spinach (baby spinach has less of a bitter green flavor, but we used large spinach leaves, stems still attached - that's up to you)

9 toss it all around so that spinach wilts

10 once the spinach is wilted, add in 1 can of strained/rinsed white beans (navy beans) and 1 cup cooked quinoa (this is probably about 1/3 cup uncooked quinoa, but I suggest you make a whole 1 cup quinoa and just use the leftovers for something else!)

11 toss it all together, then devour

It was pretty delicious, but I'd have to agree that it's more of a side dish than a meal, unless it had another element added to it (like bacon)!
